Vegetable Garden

The Vegetable Garden is located between the Administrative Office and the Children's Education Building. It demonstrates the French Intensive Wide Bed method of planting crops. Utilizing the elliptical shape of the area to full advantage, the wide beds have only narrow footpaths for access. The beds are mass planted to provide more vegetables in a small space. This concept can be easily adapted for home gardens. The beds are 4 feet wide and can be easily reached from all sides for planting, cultivating and harvesting.

The Vegetable Garden is planted in early April with cool weather crops such as spinach, lettuce, carrots, beets, peas, broccoli, cabbage and kale. In late spring, after all danger of frost, the planting continues with heat loving plants such as tomatoes, peppers, eggplants and cucumbers.

In late August, the cycle of cool weather crops begins again with the replanting of the aforementioned spring crops that will grow and mature into the fall as the weather cools down. Some crops, such as Brussels sprouts and broccoli, are sweeter after the first light frosts touch the garden. Culinary herbs are planted near the fence and blueberries can be found along the garden's border. Future plans call for fruit shrubs and trees to be planted down the slope on the south side of the garden.
